Holy Guacamole!

This healthy and absolutely delicious guacamole recipe is so awesome to top any Mexican dish with (or dip some non-gmo corn chips in for a treat!). Plus, it tastes so much better than store bought. It’s really easy to make and while you can eat it right away, the best flavors develop if it sets for an hour or 2.  We usually end up with a half a batch by the time it’s done ‘melding’.


  • 1 large ripe avocado
  • 2 roma tomatoes, cubed
  • 1/4 cup onion, diced
  • 1 clove garlic, minced
  • 1/2 jalapeno, minced (more/less, depending how ‘hot’ a person likes things. Also, removing the membranes and seeds take the heat down a notch)
  • Juice of 1/2 a lime
  • handful of cilantro, chopped
  • 1/8 tsp cumin
  • Black pepper and Himalayan/Celtic Sea salt to taste


Cut the avocado in half, remove the pit and scoop the avo meat into a medium bowl. Smash the avocado with a fork until it’s smooth. Add the other ingredients and mix gently with the avocado. You can eat it right away, but for best flavor, cover the bowl, put in the fridge for at least an hour for the flavors to mingle (but not for too long or it’ll turn brown on the top unless you have it completely sealed off from the air). hugs, Shannon
