Chocolate ‘Covered’ Banana Chia Pudding

I used a banana for the main sweetener in this delicious chia pudding (With a few chocolate chips mixed in), so it’s a pretty healthy dessert! The coconut milk also lends some natural sweetness, the walnuts add in a touch of nice protein and the cinnamon helps to balance your blood sugar. Even though it’s actually pretty healthy, it’s still really delish and satisfies the sweet tooth. 🙂

Chocolate ‘Covered’ Banana Chia Pudding

(makes 2 servings)


  • 1/2 cup full fat coconut milk
  • 1/8 cup chia seeds
  • 1 ripe banana
  • 1/8 cup chocolate chips
  • 4 whole walnuts, finely chopped
  • a sprinkle of cinnamon


Combine the coconut milk and chia seeds in a small bowl. Let this mixture sit so the chia seeds can plump up, about 20 minutes, stirring the mix a few times throughout the 20 minutes. While you are waiting, in a separate bowl, smash up the banana into a puree. Once the chia mixture has reached a pudding-like consistency, stir into the banana. Add in the chocolate chips, stir. Divide into 2 small bowls and top with the finely chipped walnuts and sprinkle of cinnamon. If you prefer, throw into the fridge for a little while to chill before eating.
