Foodie Friday: Chopped Kale Salad

Following a day of Halloween candy binging, here is a perfectly timed Foodie Friday that focuses on getting our nutrition back in balance. This finely chopped kale salad mixed with the citrus of the dressing helps to soften the kale and a salad that’s easy to enjoy.


2-3 Cups Baby Kale Chop

2 Tablespoons Olive Oil

1 Tablespoon Lemon Juice

1/4 Cup Dried Cranberries

1/4 Cup Chopped/ Slivered Almonds

Sprinkle of Chopped Yellow Onion

Sprinkle of Feta or Parmesan Cheese


Place 2-3 cups baby kale in food processor until finely chopped.

Make dressing of 2 tablespoons olive oil and 1 tablespoon lemon juice.

Add dried cranberries, chopped/slivered almonds, onion, and feta or parmesan cheese.

Mix together and serve.
