Foodie Friday: Kale and Goji Salad

Serves 2 as a side salad

Ingredients

4 or 5 large lacinato kale leaves, destemmed, chopped and massaged

1 big carrot, cut into really thin strips (I used a citrus zester)

1/4 cup goji berries, soaked and drained

1 Tbsp finely chopped red onion

1/2 of an avocado, diced

Feta crumbles to taste (I used goat feta, and it was about 1/2 cup divided between two plates)

2 Tbsp finely chopped walnuts

2 drizzles of olive oil

salt and pepper, if desired

Directions

While you prepare the other ingredients, use filtered water to soak the goji berries for 15 to 20 minutes, until they are plumped and rehydrated. Drain the soak water off (you can drink it if you wish!). Strip the big center stem out of the kale leaves and chop the leaves into bite-sized pieces. With your hands, massage the kale until it breaks down (so it’s more edible). Assemble the kale, carrot, gojis, onion, and avocado on 2 plates. Top with the feta cheese, walnuts and a nice drizzle of olive oil (and salt and pepper, if using).  Enjoy!
